  4. Pour the lentil mixture into an ovenproof dish and spread evenly. Top with the mash potato and bake for 15-20 minutes, until crisp and golden.
  5. Serve with seasonal vegetables.

If your gravy is too thin, the potato topping will sink into it. Season to taste and remove the bay leaf. The exact origin of Shepherd's pie is a bit of a mystery!
