  5. Take 100-150 g firm tofu, pressed and drained and cut into cubes
  6. Get 2-3 tbsp sesame seeds
  7. Make ready 750 ml hot water
  8. Get 2-3 tbsp white miso paste
  9. Make ready 1-2 heads tatsoi or komatsuna or pak choi, torn into small pieces
  10. Prepare Some shichimi if you have some or chill flakes - optional
  11. Prepare Enough soba for two

Add the spring onions and ginger. Add the tofu and sesame seeds. Add them to a blender together with all other tomato sauce ingredients and blend. Fully vegan, whole food plant based and gluten free!

Steps to make 10 minute soba special - vegan:
  1. Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside.
  2. In a jug, mix the miso and water until the miso is dissolved.
  3. Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins.
  4. Add the mushrooms and sauté for 2-3 mins.
  5. Add the tofu and sesame seeds. Sauté for 1-2 mins.
  6. Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins.
  7. You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋
